I have been getting bored with dinner so last night I dove into my cookbooks and tried to find a new recipe for the same old boring chicken! I found a winner in The Bon Appetit Fresh Easy Fast Cookbook. Mojito Chicken! Here is the fabulous recipe and a few pictures of the process of making dinner for M and I:)
Ingredients:
-3/4 cup fresh lime juice
-1/2 cup fresh mint, chopped finely
-1/2 cup plus 2 tbsp light rum
-6 tablespoons mint syrup
-4 chicken breasts
-2 limes, cut into slices
Take the lime juice, mint, 1/2 cup rum, and mint syrup and combine with a whisk. If you don’t have mint syrup you can make it with 1/2 cup sugar and 1/2 cup water, heated until the sugar dissolves, then add chopped mint and allow to cool. Tenderize the chicken breasts and soak them in the marinade for 1-4 hours.
Take the additional 2 tbsp on rum and soak the sliced limes at room temperature.
Once the chicken and limes have marinated place them onto your pre-heated grill. Cook the chicken until thoroughly cooked, and sear the limes until tender!
Once cooked take the chicken and top with the rum soaked lime garnish and serve!
