Berries in the Kitchen!!

I have turned to the fabulous fresh berries that I found at the farmer’s market this week as the inspiration for a few items whipped up in the PreppyKitchen this week! Both of these amazing recipes are from Clean Eating Magazine, one of my most favorite sources for healthy recipes! For dinner we made Chicken with Sautéed Blackberry Sauce, and it was delicious! Here are some pictures and the recipe:

Chicken with Sautéed Blackberry Sauce

Ingredients: 4 6oz boneless chicken breasts, 1/2tsp sea salt, 1/2 tsp black pepper, 2tbsp olive oil, 1/3cup chopped shallots, 1tsp fresh rosemary, 1cup blackberries, 1/2cup 100% pomegranate or blueberry pomegranate juice.

-Season chicken on both sides with salt and pepper. In a large skillet or saute pan heat oil on medium. Add chicken and cook for 6 minutes on each side or until cooked through. Transfer chicken to serving plates and let rest for 5 minutes.

-Meanwhile in the same skillet on medium-high heat add shallots and rosemary and cook until shallots are tender, about 1 minute. Stir in blackberries and pomegranate juice, deglazing pan by scraping up any browned bits from bottom of the skillet with heatsafe spatula. Cook until liquid is reduced to a thin layer, 1-2 minutes.

-Top Chicken with berry mixture and serve! I served ours with a heap of organic green beans:)

For dessert I found another amazing recipe also from Clean Eating for homemade Blueberry Yogurt Popsicles. I had used our popsicle molds before but these were above and beyond anything I made before!

Blueberry Yogurt Popsicles

Ingredients: 2 cups blueberries, 2tbsp evaporated cane juice (I subbed 1tbsp agave nectar for this), 2 cups plain non-fat yogurt, 1tsp vanilla extract, 1/2tsp lemon zest

Ingredients!

 -In a medium saucepan combine blueberries, agave, and 2tsp water and cook over medium heat for 1-2 minutes or until blueberries soften. Allow berry mix to simmer for an additional 2 minutes then set aside to cool.

-Meanwhile mix together yogurt, vanilla extract, and lemon zest in a bowl. Slowly fold the slightly cooled blueberry mixture into the bowl and stir.

-Pour mixture into popsicle molds and insert sticks. Freeze for 3-4 hours or until frozen solid, then enjoy!

I always love cooking with fresh seasonal ingredients so these are definitely two delicious one’s  I will be keeping on my list for summer. Enjoy!!
